Nana’s Zuchini-Quinoa Bread

Whether you are craving an afternoon snack or simply a dessert, Nana’s Zuchini-Quinoa Bread is the perfect combination of healthy and tasty.

  • 3 cups Miski Organics white quinoa flour
  • 1 ½ tsp. xantham gum
  • 1 tsp. sea salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tbsp. ground cinnamon
  • 3 eggs
  • 1 cup grape seed oil
  • 1 ½ cups raw cane sugar
  • 2 tbsp. vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped pecans

Step by Step:

  1. Preheat oven at 325 degrees F (165 degrees C).
  2. In a bowl combine quinoa flour, xantham gum, salt, baking powder, baking soda and cinnamon.
  3. On a separate bowl mix eggs, oil, vanilla extract and sugar and beat well.  Add dry ingredients to this batter and mix until all ingredients are well blended.  Incorporate zucchini and pecans and stir.
  4. Grease and flour 13 x 4.5 rectangular baking pan, pour mix and bake for 1 hour at 325 degrees F.
  5. Cool in pan for 20 minutes. Once cold remove from pan, slice and enjoy.
