No-Bake Energy Squares

Preparation time: 30 minutes
Yields approximately 30 squares

Ingredients:

  • 2 ½ tbsp gelatinized maca powder
  • 1 ½ cup cashews (previously soaked and drained)
  • 1 ½ cup pitted dates
  • 1 cup unsweetened shredded coconut
  • 1 tbsp vanilla extract
  • 1 tbsp maple syrup
  • 2 tbsp water

Step-by-Step:

Place all ingredients into a food processor and process until smooth.
Once the mixture is combined, place it in the fridge for 10-20 minutes so that it will harden slightly.
To form the squares transfer mixture to a 24-cavity silicone baking mold and place back in the
refrigerator for about 1 hour.
Store in anairtight container and keep refrigerated for up to 1 week.

Variations

Apple Cinnamon:

  • 2 ½ tbsp. gelatinized Maca Powder
  • ½ cup walnuts (previously soaked and drained)
  • 1 cup almonds (previously soaked and drained)
  • 1 cup pitted dates
  • 1 ½ cup dried apples
  • ½ tbsp ground cinnamon
  • 1 tbsp maple syrup

Cacao Nibs:

  • 2 ½ tbsp. gelatinized Maca Powder
  • 1 cup cashews (previously soaked and drained)
  • 1 cup almonds (previously soaked and drained)
  • 1 cup pitted dates
  • ½ cup cacao nibs
  • ½ tbsp vanilla extract
  • 2 tbsp maple syrup
  • 1 tbsp water

Golden Berry-Chia:

  • 1 ½ tbsp. gelatinized Maca Powder
  • 1 ½ cup cashews (previously soaked and drained)
  • 1 ½ cup pitted dates
  • ½ cup golden berries
  • ½ cup chia seeds
  • ½ cup unsweetened shredded coconut
  • ½ tbsp camu camu powder
  • 1 tbsp maple syrup
  • 2 tbsp water
