Chocolate Chip Banana Protein Muffins

Looking for a delicious, satisfying, healthy treat while still getting in that protein you need? Or just for an easy, filling snack that’s sure to please? You have to try these amazing Chocolate Chip Banana Protein Muffins! 

Made with quinoa, they contain good-for-you fibre, potassium and iron. This means they are great for an energy kick in the morning, or as replenishment after a workout. Although honestly, you can enjoy these banana protein muffins any time of day. How nice is it to have fresh muffins made to grab on the go? Especially when they are healthy and tasty enough for the whole family?!

Not feeling chocolate chips? No problem! Leave them out or swap them for some dried golden berries and/or pomegranate seeds. So good, not to mention antioxidant rich!

What is also great about this recipe is that it is gluten-free – but will not break the bank! Miski Organics’ quinoa flakes and flour are a much less costly alternative to many gluten-free flours on the market.

And of course, these banana protein muffins are also vegan and plant-based! This recipe is so good – you’ll be whipping up another batch before you know it!

Makes: 6 regular or 12 mini muffins.

Prep Time: 7 minutes

Bake Time: 15 minutes

  • 1 large ripe banana 
  • 1 flax egg = 1 tbsp. of ground flaxseeds mixed with 3 tbsp. of cold water (let it sit for 10 minutes)
  • 2 scoops vanilla protein powder
  • 1/3 cup white quinoa flakes)
  • 1/3 cup white quinoa flour)
  • 1/3 cup unsweetened almond or cashew milk
  • 1/4 cup unsweetened apple sauce
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup vegan chocolate chips (we used the Enjoy Life Semi-Sweet Mini Chocolate Chips)
  • 1/4 tsp vanilla extract
  1. Pre-heat oven to 350ºF
  2. Mix all the dry ingredients in a large bowl (except for the chocolate chips).
  3. Add all the liquid ingredients in one at a time into the bowl of dry ingredients and mix thoroughly.
  4. Add the vegan chocolate chips at the end and mix together until you get a thick and fluffy consistency.
  5. Spray a muffin pan with cooking spray and spoon the dough as desired into the muffin pan.
  6. Bake for 15 minutes
  7. Remove and let the muffins cool.
  8. Enjoy!
