You will simply love these Lucuma muffins!!! Lucuma is an exotic Peruvian superfruit with incredible amounts of vitamins and phytonutrients to support skin wellness. It has a delicious creamy flavour with a touch of maple. Rich in antioxidants and with a low glycemic index, lucuma is known by the locals as the “Gold of the Incas” and has been a staple food in the Andes for centuries.
This recipe makes 12-13 muffins. Happy cooking!
1 ¼ cups almond flour
1 cup vegetable milk
1 1/3 cups Miski Organics Raw Cacao Powder
1 tbsp Miski Organics Lucuma Powder
1 tsp apple cider vinegar
1 1/3 cups Organic Maple Syrup
1 tbsp gluten-free baking powder
¼ tsp sea salt
¼ tsp baking soda
½ cup melted coconut oil
½ cup unsweetened applesauce
1 cup shredded zucchini
Preheat oven to 400° F. On a separate bowl combine milk with vinegar and mix well. Add the rest of the ingredients one by one and stir to integrate batter. Mix everything together and allow the batter to sit for 10 to 15 minutes. Add some coconut oil to the muffin pan and scoop batter into muffin cups. Bake for 25 minutes or until toothpick inserted in centre comes out clean with just a few moist crumbs attached. Let muffins cool for 20 minutes. Enjoy!
