No-Bake Energy Squares

Preparation time:  30 minutes

Yields approximately 30 squares

INGREDIENTS:

2 ½ tbsp gelatinized maca powder

1 ½ cup cashews (previously soaked and drained)

1 ½ cup pitted dates

1 cup unsweetened shredded coconut

1 tbsp vanilla extract

1 tbsp maple syrup

2 tbsp water

 

PREPARATION:

Place all ingredients into a food processor and process until smooth.

Once the mixture is combined, place it in the fridge for 10-20 minutes so that it will harden slightly.

To form the squares transfer mixture to a 24-cavity silicone baking mold and place back in the refrigerator for about 1 hour.

Store in an airtight container and keep refrigerated for up to 1 week.

 

VARIATIONS:

Apple Cinnamon:

2 ½ tbsp. gelatinized maca powder

½ cup walnuts (previously soaked and drained)

1 cup almonds (previously soaked and drained)

1 cup pitted dates

1 ½ cup dried apples

½ tbsp ground cinnamon

1 tbsp maple syrup

 

Cacao Nibs:

2 ½ tbsp. gelatinized maca powder

1 cup cashews (previously soaked and drained)

1 cup almonds (previously soaked and drained)

1 cup pitted dates

½ cup cacao nibs

½ tbsp vanilla extract

2 tbsp maple syrup

1 tbsp water

 

Golden Berry-Chia:

1 ½ tbsp Gelatinized Maca Powder

1 ½ cup cashews (previously soaked and drained)

1 ½ cup pitted dates

½ cup golden berries

½ cup chia seeds

½ cup unsweetened shredded coconut

½ tbsp Camu Camu powder

1 tbsp maple syrup

2 tbsp water
