Volcanic Canihua Beets – Delicious Vegan Option for Thanksgiving

You will love our Canihua and will be fascinated with the richness of its taste. This recipe is inspired by the seasonal harvest in Ontario.  It is perfect for a powerful lunch!  It serves 2-3 people.


4 Beets

1 cup of Miski Organics Canihua Grains

1 apple cut into small squares

1 celery stalk cut into small squares

¼ cup of pine nuts and/or raisins

½  cup of chopped parsley

1 tea spoon of El Inka Aji Amarillo paste

1  minced garlic

1 tea spoon of olive oil



Peel and roast beets for 15 minutes at 350°. Take beets out of the oven and let them cool until you can carve a small hole in the centre.

For the filling: Add two cups of water to 1 cup of Canihua Grains.  Bring to a boil and let water evaporate. Add aji amarillo, minced garlic, and all ingredients to mix with the Canihua grains in the same pot. Season with salt and pepper, and add to the beets as filling.  Roast beets for 20 minutes and serve.
