Camu Camu Very Berry Jungle Magik! 🌱 By: Alexandra England, Holistic Educator – @thenewmadrewellness 💕

This recipe is all about jungle magic. Let me introduce you to Camu Camu; one of the most potent sources of vitamin C on planet earth.  Not only does vitamin C help us fight colds, but also works as a mood enhancer. Camu Camu also contains a high level of antioxidants and polyphenols. Polyphenols are micronutrients that we get through some plant-based foods. Polyphenols can improve or help treat digestion issues, weight management difficulties, diabetes, neurodegenerative disease, and cardiovascular diseases. 💥💥💥

Camu Camu is a berry that grows in the exuberant jungle of Peru. Plant-based foods provide us with vitamins and nutrients characteristic of the land they grow in.  Coming from the jungle of Peru, Camu Camu is rich in phytonutrients. It certainly does not lack colour or power! Are you ready to have a treat? 😋

Ingredients 👇🏼

✨ FOR THE BASE ✨
6 Medjool dates
1 cup of almonds
1 tablespoon of coconut oil

✨ FOR THE MOUSSE ✨
1 cup of organic coconut cream (Cha’s works well)
2 tablespoons of Miski Organics Camu Camu Powder
2 tablespoons of maple syrup

Instructions 📝 

1️⃣ To prepare the base process ingredients on a food processor (Vitamix, magic bullet, or any food processor works!) Push mix down on a small bowl.
2️⃣ Pour mousse on top of the base and refrigerate for 2 hours. 
3️⃣ Serve decorated with strawberries, berries, and tropical foods on top!

For centuries, Peru who had been conquered by the Spaniards was no stranger to slavery. It is the black slaves who creatively took traditional Andean ingredients and other foods, transforming them into what is known today as “comida criolla” (creole food). 

Today, Peru’s world-renown cuisine is a mixture of many cultures, and some of the most well-known traditional dishes were created by Afro-Peruvians over the centuries. Peru’s culinary history and pride has, in great part, been shaped by black people.

✨RECIPE OF THE WEEK ✨ Raw Chocolate Hazelnut B ✨RECIPE OF THE WEEK ✨
Raw Chocolate Hazelnut Brownies 😋

Ingredients 👇🏼
🌟CRUST🌟
1/3 cup cacao powder
1/3 cup almond flour
1 cup hazelnuts
1 cup soft medjool dates

🌟CARAMEL🌟
1 cup soft medjool dates
1/3 cup coconut cream
2 tbsp maple syrup
1 tbsp mesquite powder

🌟CHOCOLATE🌟
2 chocolate baking squares
2 tbsp coconut oil
2-3 tbsp maple syrup
1 tbsp coconut cream
Garnish with salt

Instructions 📝 

1️⃣ Let’s prepare the pan you will be freezing the dessert in; I used a 6 x 6 baking pan. Line the pan with a layer of plastic wrap. This will prevent sticking and allow you to easily remove it when you are ready to enjoy it.
2️⃣ Place all your ingredients for the crust into the food processor and run on high until everything is mixed well. Check to be sure the dough is sticky. If you find it still dry and crumbly continue to mix and add a tablespoon of water.
3️⃣ Pour the paste into your prepared dish and cover a layer on the bottom. Be sure to spread out evenly into all four corners. Push hard so tightly packs. I sometimes use the back of a wet metal spoon.
4️⃣ Going back to the food processor add in all your ingredients for the Carmel layer and mix well. I find I’ll need to start and stop a few times scrapping down the edges.
5️⃣ Continue to layer the caramel paste on top of your chocolate crust. You are almost there 😉
6️⃣ Add all your chocolate ingredients to a heatproof bowl and place them on top of a small pot filled halfway with water. You’ll want to bring the water to a boil and then completely lower to low heat. Remember to consistently stir.
7️⃣ When the chocolate is just at your standards pour it over the caramel layer. Tilt the pan in all different angles to get it flowing and covering all areas.
8️⃣ Garnish with sea salt and freezer for an hour.

When ready to serve allow for 5-10 minutes to thaw. I like to cut mine up into squares and keep them in an airtight container to pull out a square or two when I want 😍
